Honey Bourbon Balls

INGREDIENTS
- 1c. vanilla wafters
- 1c. toasted pecan halves
- 2 tbsp. powdered sugar
- 1 tbsp. Unsweetened cocoa powder
- 1 tbsp. honey
- 2 tbsp. honey whiskey
- tsp. vanilla extract
DIRECTIONS
- Crush the wafers in a food processor or in a plastic bag, using a rolling pin. Transfer to a small bowl.
- Finely chop the pecans, and add most of them to wafers, reserving the remaining nuts in a shallow bowl.
- Add all the remaining ingredients, and stir until well blended.
- Roll into 1 inch balls, and then roll in the reserved chopped pecans or cocoa powder, for serving.
